Loaded Baked Low Carb Chicken Recipe

Ingredients
  

  • 8 oz Boneless Chicken Breast
  • 1 Cup Broccoli
  • 1/4 lb bacon
  • 6 slices American Cheese slices (Kraft Singles)
  • 1/2 cup Sour Cream optional
  • salt
  • pepper
  • garlic powder

Instructions
 

  • Pre-heat oven to 350 degrees
  • As your oven warms, trim chicken to remove any excess fat. If a fatter chicken breast, slice in half.
  • Sprinkle chicken with salt, pepper and garlic to your liking.
  • Next, you'll want to pan sear your seasoned chicken in a mid-high heat on the stove. You will want to cook for approximately 4 minutes each side to get a nice browning. Lower the heat to medium if it starts cooking too quickly.
  • In the meantime, cut and chop your broccoli to get ready to steam. To steam on the stovetop, fill a pot with about an inch of water and bring to a boil. Drop in your broccoli florets and cover for approximately 6-8 minutes, or until soft.
  • As the broccoli steams, pull chicken out of the pan and place on a lined, greased sheet pan and place in the oven for 10-15 minutes, or until cooked through.
  • While that is cooking, fry up the bacon. Once cooked crispy, place on a paper towel to dry.
  • As the bacon is cooling and drying, take the steamed broccoli and quickly fry it in the same pan you used for the bacon. This will give it a nice little smokey, deeper flavor.
  • After the chicken is finished in the oven and the broccoli has fry, take the chicken out of the oven (but keep it on the tray), sprinkle on more salt, pepper, and garlic to your liking, and top it with half of the broccoli and bacon evenly across all chicken breasts.
  • Melt the cheese in a bowl and then pour onto the chicken for a nice gooey effect! Then, add the remaining broccoli and cheese.
  • Serve and enjoy!
  • Optional: top with a large dollop of sour cream!
